Craving for some yummy cheesecake but too lazy to bake? Here’s a recipe for pastel no-bake cheesecake that is not only beautiful to look at, delicious to taste, but also super easy to make! Ready for some magical and rainbow-y afternoon tea moment? Let’s go!
【Ingredients】
Digestive biscuits - 60g
Butter (melted) - 30g
Cream cheese - 250g
Plain yogurt - 65g
Vanilla sugar - 4 teaspoons
Lemon juice - 10g
Leaf gelatine - 5g
Whipped cream - 170g
Marshmallow
Food coloring - red, yellow & blue
Sprinkles
【Directions】
FOR BASE
1. Crush the digestive biscuits into crumbs, mix it with the melted butter and put it aside.
2. Line your mold with marshmallow and spread the crushed biscuits at the bottom. Press the base with the back of a spoon until its surface smooths out and flattens.

FOR CHEESECAKE
1. Let the cream cheese soften at room temperature. Combine it with the yogurt and stir well.
2. Add vanilla sugar and lemon juice into the mixture. Stir again.
3. Mix leaf gelatine with the cheesecake mixture, then add whipped cream and stir until they combine.
4. Divide cheesecake mixture into 4 bowls, tint 3 bowls with one food coloring each, leaving one bowl in original color.

5. Pour blue mixture over biscuit base and freeze for 10 minutes, repeat with yellow, red and the original layers.
6. Refrigerate the cake for 2 hours.
7. Top the cake with sprinkles and voila!
