Crème brûlée is undoubtedly one of the most classic French desserts. The textural difference between the brilliantly crispy, burnt sugar on top and creamy, smooth custard that comes after it makes the dessert almost everybody’s favorite.
Now here’s a foolproof crème brûlée recipe, and it’s impossible to not try! Let’s go!
【Ingredients】
Egg - 3
Milk - 240g
White sugar - 90g
Vanilla extract - 1 teaspoon
Whipped cream -250ml
Some brown sugar
【Directions】
1. In a saucepan, stir milk, white sugar and whipped cream over low heat until it almost comes to boil. Remove mixture from heat when the sugar dissolves completely. Then, add vanilla extract and stir well.
2. Beat eggs until thick and creamy. Gently stir in the cream mixture.
3. Strain the custard for a few times for a smoother texture.
4. Pour the custard into ramekins, remove the bubbles on the surface with a spoon.
5. Bake in preheated oven at 170 degrees for 35-40 minutes.
*Put a 1cm hot water in the oven before baking
6. Remove custard from oven and cool to room temperature. Refrigerate for at least 2 hours for a smoother texture. Sift brown sugar (or white sugar) evenly over custard.
7. Using a blow torch, melt the sugar and form a crispy top. If you don’t have a blow torch, bake it for another 15 minutes at 170 degrees.
