If you're in need of a quick pick-me-up that's still fulfilling (and delicious, obvi), then you need to try your hands on this viral TikTok recipe.
Created by influencer Emily Mariko (who's also on Youtube), her salmon rice bowl has been blowing up on TikTok thanks to its easy preparation. While you may think this sounds like another typical salmon dish, the ice in the rice is what really makes hers distinct.

What You'll Need:
-Cooked salmon fillet
-Leftover white rice
-Sriracha
-Kewpie mayonnaise
-Soy sauce
-Nori
-Optional: avocado, kimchi or spring onions
Steps:
1. In a microwaveable bowl, add in the salmon fillet and rice.
2. Place an ice cube in the middle. Then, cover the bowl with a sheet of greaseproof paper.
3. Microwave for 1-2 minutes, or until hot. Once done, remove the ice cube and greaseproof paper.
4. Drizzle with some sriracha, mayonnaise and soy sauce all over. Mix well. *You can even top the dish with optional ingredients listed above for extra flavor.*
5. Wrap everything up in nori for some crunch.
