What You'll Need:
- Chocolate biscuits (of your choice), 125g
- Butter, 50g (melted)
- Milo, 1/4 cup
- Marie biscuits, 6
- Chocolate milk, 60ml
- Thickened cream, 200ml (whipped)
To make the CHOCOLATE CUSTARD:
- Dark chocolate chips, 125g
- Milo, 2 tbs
- Custard, 3/4 cup
To make the MILO JELLY:
- Milk, 200ml
- Milo, 2 tbs
- Thickened cream, 100ml
- Caster sugar, 2 tsp
- Gelatine, 1 tsp
Steps:
1. Preheat oven to 180C. Add chocolate biscuits to a food processor and blitz into a fine crumb. Add in Milo and melted butter. Place the mixture on a tray lined with baking paper and spread it into a thin layer. Bake for 8 minutes. Once cooled, break into pieces then place in a ziplock bag before bashing with a rolling pin to form coarse crumbs.
2. Cut the Marie biscuits to fit the base of your serving glasses. Place 1-2 layers then pour over the chocolate milk, allowing it to soak in. To ensure the biscuits are well coated, gently press down with a spoon.
3. For the custard- in a heatproof bowl, add dark chocolate chips over a saucepan of simmering water. Stir until melted. Then, mix in the custard and stir until smooth and silky. Remove from heat and stir through Milo. Top the custard over Marie biscuits in serving glasses and refrigerate to set.
4. For the Milo jelly: In a saucepan, heat cream and 100ml of milk until just simmering. Stir through sugar and whisk in gelatine until completely dissolved. Add the remaining 100ml milk and Milo, and whisk until combined. Pour into a jug and let cool for 10 minutes.
5. Place 1-2 teaspoons of biscuit crumbs in serving glasses on top of the custard that has been set. Top with the cooled jelly mixture to form a layer. Place in the fridge again and let it set completely for 30 minutes.
6. For serving, add a second layer of chocolate crumb then top with whipped cream and a sprinkle of Milo.
