Glutinous rice flour doesn’t always have to be made into sticky food. This recipe will show you how to make a moist and spongy cake using the flour. Let’s go!
【Ingredients】
150g glutinous rice flour
15g corn oil
4 eggs, separate the egg whites and egg yolks
100g of milk
35g castor sugar
Some lemon juice
【Directions】
1. Combine corn oil and milk in a mixing bowl until completely blended. Add egg yolks and stir well.
2. Sift the glutinous rice flour in the bowl and stir just until the batter can still flow.
3. In another bowl, mix egg white, lemon juice and castor sugar until thicken. The sugar should be added a little at a time, for 3 times.
4. Pour half of the egg yolk batter into the meringue. Stir well. Then, pour the mixture into the remaining egg yolk batter and gently stir again.
5. Pour batter into mold and bake in a preheated oven at 175 degrees for 28 minutes.
