A Chinese New Year celebration isn't complete without treating your guests to a sumptuous spread. Be it savoury or dessert, a comforting meal makes any gathering more inviting and fulfilling.
To mark the occasion, why not spoil your loved ones with some koi fish jellies- a type of dessert that's both sinfully yummy and aesthetically pleasing? Inspired by Sherbakes, this statement dish is guaranteed to WOW the crowd.
What You'll Need:
- Agar Agar powder, 5g (Get it here)
- Koi fish mould (Get it here)
- Coconut milk, 200g
- Sugar, 50g
- Water, 400g
- Raisins, for the eyes
- Food gel, for the coloring (Get it here)
- Paintbrush
Steps:
1. Mix water, sugar and agar agar powder in a pan. Boil until melted.
2. In a small bowl, coat the raisins with 1 tablespoon of the boiled jelly. Next, transfer the coated raisins onto the 'eyes' section of the mould.
3. In a separate bowl, mix together another 1 tablespoon of the boiled jelly and food coloring of your choice.
4. For the mould, start by painting the insides with the coloured jelly. Once done, refrigerate and let sit for around 5 minutes.
5. For the remaining boiled jelly, add in coconut milk then boil again.
6. Once the coconut jelly mixture is cooled, pour it over the refrigerated fish mould. Then, allow it to set completely by refrigerating again.
8. Once set, remove the jellies from the mould and enjoy.
