A hearty dish originated from North Africa and Middle East, the shakshuka can be eaten for breakfast or any meal of the day. With a dash of tomatoes, spices and poached eggs, it's no wonder this dish means "all mixed up". The Star Ingredients Needed:
Olive oil, 1 tbsp
1 onion, finely diced
2 garlic cloves, crushed
1 red capsicum, finely diced
2 chillies, finely diced
Tomato paste, 2 tbsp
Smoky paprika, 1 tbsp
Ground cumin, 1 tbsp
6 tomatoes, diced or crushed
Brown sugar, ½ tsp
6 eggs
A handful of parsley sprigs
Fresh crusty bread, to serve
Steps:
1. Add the onion, garlic, capsicum and chilli into a frying pan over medium-high heat. Cook for about 3–5 minutes, or until tender and caramelised.
2. Add tomato paste, cumin and paprika. Cook for 1 minute, or until fragrant. Add the diced tomatoes and sugar, and stir to combine. Reduce the heat to medium-low and cook for 15–20 minutes.
3. Stir the tomato sauce. Then, crack the eggs one by one into the mixture.
4. Reduce the heat to low and cook for another 5 minutes, or until the eggs are cooked the way you prefer. Season with salt and pepper, garnish with parsley and serve with fresh crusty bread.
