The Mooncake Festival is just around the corner (21st September 2021)! Are you ready to make some mooncakes by yourself? Here is a Pandan Gula Melaka Jelly Mooncake recipe which is always given applause by adults and children. You would definitely make a successful mooncake if you follow the instructions step by step!
Ingredients needed (separate into 3 parts)
Jelly Egg Yolk:
100g Pumpkin, chopped
150g Water
35g Sugar
170g Water
1½ tsp Agar agar powder
Gula Melaka Filling:
100g Gula melaka, chopped
300g Water
2 Pandan leaves, knotted
1.5 tsp Agar agar powder
Pandan Mooncake Skin:
320g Water
3 Pandan leaves, knotted
100g Sugar
1.5 tsp Agar agar powder
2 tbsp Fresh milk
¼ tsp Pandan paste
Instructions
Jelly egg yolk:
1. Boil 150g of water. Add in sugar and chopped pumpkin. Cook until the chopped pumpkins become soft.
2. Strain the mixture to get pumpkin liquid. Then, combine it with 170g water and agar agar powder. Boil the mixture over medium heat.
3. Pour the mixture into the molds and put them to chill for 15 minutes. Remove them from mold and set them aside.
Gula Melaka Filling:
1. Add water, gula melaka, agar agar powder and pandan leaves into a pot to boil. Remember to stir it until gula melaka is completely dissolved. Strain the mixture.
2. Pour the mixture into muffin cups but remember not to fill it fully. (Around 0.5cm high)
3. Put the egg yolk in the middle of the cup. Add in the mixture again until the cup is filled evenly.
4. Chill them for 15 minutes. After that, remove the jelly from the cups and set them aside.
Pandan Mooncake Skin:
1. Cook water, sugar, pandan leaves and agar agar powder in a pot over medium heat. Similar to the instructions for gula melaka jelly, remember to stir the mixture continuously.
2. After turning off the heat, take out the pandan leaves. Continue to stir for around 1 minute.
3. Add in fresh milk and pandan paste. Stir it again.
Last few steps~
1. Pour the pandan liquid into mooncake molds. (Around 0.5cm high)
2. Put the filling into it. Then, pour in remaining pandan liquid.
3. Keep the mooncake mold in the refrigerator until it is completely chilled.
4. Ready to serve!
