Here’s the simplest recipe for creme caramel that will help satisfy your sweet little midnight cravings. It does't even require an oven! This recipe is for two servings.
You will need
+ 2 large eggs
+ 200ML full cream milk (room temperature)
+ 4-5 Table spoons of sugar
+ 1 teaspoon of vanilla
Some water
First you will have to make the caramelised sugar. Here are the steps you gave to follow.
1. Add 2 heaping full tablespoons of sugar to a pan.
2. Switch the heat on to a medium.
3. Add two to three tablespoons of water to the sugar.
4. Instead of mixing it in with a spoon, shake the pan to mix the sugar and water.
Make sure you keep and eye on the pan as it might burn!
Keep shaking the pan as the sugar slowly melts and caramelised. It will only take around 10 minutes.
5. Once the sugar is a nice brown colour. Quickly turn off the heat and add the caramelised sugar to the ramekins. Make sure it costs the entire bottom surface of the rameskins.
Tip: if the sugar hardens in the pan before pouring it in, add some water to the pan.
As for the pudding mixture:
1. Break the the two large eggs in a bowl. Add in the milk and vanilla then mix until combined.
2. You can add 2 or 3 tablespoons of sugar according to your preference.
3. Mix it together until the sugar is completely melted.
Once the pudding mixture is done, just add it to the ramekins on top of the caramelised sugar.
Now all you have to do is place the ramekins in a steamer for about 20-30 minutes until the pudding hardens.
After it’s done, let it cool in the fridge for about an hour before serving.
To serve it, just your serving plate on the rameskin then flip it over and remove the rameskin. That’s all!
