Amidst CMCO, many of us prefer to stay at home in order to stop the spread of COVID-19. Instead of calling delivery, why don't we cook some delicious food for ourselves? Other than pasta, we can actually cook some delicious seafood dishes for ourselves or family as lunch or dinner. How? Let's check out the recommended seafood recipes below.
Salt and Pepper Squid
Ingredients: 2 pounds baby squid, vegetable oil
Marinade: 2 tablespoons Shaoxing wine, 1/4 teaspoon salt, minced ginger, minced garlic
Coating: 1/3 cup all-purpose flour, 1/3 cup cornstarch, 1/4 cup cornmeal, 1/2 teaspoon salt, 1/2 teaspoon white pepper
Steps:
1. Rinse squid with water and slice them into pieces.
2. Transfer the sliced squid into a big bowl and mix it thoroughly with marinade ingredients. Marinate it for at least 15 mins to 1 hour.
3. Mix all the ingredients for the dry coating in a big bowl.
4. Add oil to a pot and heat it over medium-high heat until it reaches 190 to 200°C. You can place a bamboo chopstick into the oil. You should see small bubbles formed around the chopstick. Change to medium heat.
5. Transfer half of the coating and a half of the squid into a large ziplock bag. Shake and the bag to coat the squid well.
6. Place a wire rack on a big tray to drain the squid.
7. Separate the squid pieces and place them on a large spider sieve. Lower into the hot oil. Fry until the squid turns golden brown. Transfer to the prepared wire rack. Cook the remaining quantities with the identical method.
8. Serve the squid with lemon wedges. You can also dip them in sauces such as mayonnaise, ketchup, or mustard.
Spicy New Orleans Shrimp
Ingredients: 2 pounds of white tiger shrimp, 2 tablespoons butter, 2 tablespoons olive oil, 2 tablespoons sweet chili sauce, 1 tablespoon Worcestershire, 1 tablespoon chili powder, 1 tablespoon smoked paprika, 1 tablespoon dried oregano, 1 tablespoon tabasco, 4 cloves garlic (minced), lemon juice, salt, pepper, 2 tablespoons parsley (chopped)
Steps:
1. Peel and devein the shrimp.
2. Add the rest of the ingredients to a skillet. Stir and let simmer for 5-10 minutes.
3. Remove skillet from the heat and let cool for a couple of minutes.
4. Add and toss the shrimp around to make them fully covered in the sauce.
5. Cover with foil and marinate for at least 30 minutes to 4 hours.
6. Preheat oven to 400 degrees. Bake shrimp for 10-15 minutes.
7. Serve with French bread and add some lemon juice.
Ingredients: 8 large sea scallops (removed side muscle), 1 tablespoon olive oil, salt and pepper to taste, 2 tablespoons unsalted butter, 2 tablespoons parsley (minced), 1–2 cloves garlic (minced), lemon juice
Steps:
1. Pat scallops dry and season with salt and pepper. Mince the parsley and garlic and set aside. Add the olive oil to a skillet and bring it to high heat.
2. Once the skillet is hot, add the scallops to the pan and sear for 2 minutes per side until they become golden brown.
3. Remove scallops from the skillet and set aside. Add the butter, garlic, lemon, and fresh parsley to the skillet, stirring occasionally until fully melted.
4. Put the scallops in the skillet and cook for an extra minute per side. Serve after adding extra lemon butter sauce and a pinch of leftover fresh herbs.
