Looking for a new way for an egg dish? This fluffy omelet will be a great option.
The super fluffy omelet looks different than the other egg dishes, it's super light & fluffy kind of omelet. All you need is eggs, as it's made by separating the egg whites from the yolk and whisk it until they have stiff peaks.
Super Fluffy Omelet
Ingredient:
4 eggs
2 tbsps Olive Oil
3 tbsps Salted Butter (or add salt into the whipped egg)
salt & pepper, to taste
Green onion/ chives to garnish (optional)
Steps:
1. Separate the egg whites and the egg yolks in two separate bowls.
2. Whisk the egg whites for at least 1000 times until the texture becomes white with medium peaks.
3. Whisk the egg yolks and set aside.
4. Add 1/3 whipped egg whites into egg yolks, fold well with a spatula. Then add the rest white, and fold until fully incorporated.
5. Heat a pan on low fire, add olive oil. When the olive oil is heated, pour in the egg mixture. Then cover the pan lid, for about three minutes.
*Keep the stove on low the entire time to ensure the best results*
6. Open the lid when you see the bubble coming out of the omelet.
7. Try to lift up the omelet and add in salted butter underneath.
8. Season the omelet with salt and pepper.
9. Once butter melted, remove the heat.
10. Fold the omelet and sprinkle with green onions/ chives.

You can also add in other toppings or ingredients like mushroom, cheese, ham to increase the flavors, and the presentation.
Just mix in half the cheese in the egg whites & egg yolks mixture (step 4), gently fold them until well combined.
Add in the cheese on top of the omelet in step 8; close the lid and cook until cheese starts to melt.

Souffle Omelette with Mushrooms
For mushroom lovers, you may add in the sautè mushroom.
1. Sautè the garlic over medium heat.
2. Add the mushrooms and sautè for 10 minutes. Turn off the heat and season with parsley, salt, and pepper.
3. Add the mushrooms to the omelet (step 8) then carefully fold over.
4. Reserve half portion of the mushroom to serve on the side (optional)

1. Macerate the strawberries with the vanilla sugar into a bowl for 5-10 minutes.
2. Add in the vanilla strawberries on top of the omelet, then carefully fold the omelet over and sprinkle vanilla sugar over the top. (step 10)
