Craving for Subway®'s doughy and chewy cookies while being stuck in quarantine? Now you can make them at home with these simple steps.
Ingredients needed:
Wet ingredients
- ½ cup of sugar
- ¾ cup of brown sugar
- 1 teaspoon of salt
- ½ cup of butter, melted
- 1 egg
- 1 teaspoon of vanilla extract
Dry ingredients
- 1¼ cups of all-purpose flour
- ½ teaspoon of baking soda
- 4 ounces/110 g of milk or semi-sweet chocolate chunks
- 4 ounces/110 g of dark chocolate chunks (depending on your preference)
Steps:
1. Preheat oven to 350°F/180°C.
2. Add the sugars, salt & butter and whisk them together.
3. Add in egg and vanilla extract and whisk until it forms a peanut butter consistency.
4. Sift in the flour and baking soda into the wet ingredient mixture and mix with a spatula.
5. Add in the chocolate chunks and let the dough rest for at least 30 minutes.
6. Scoop the dough to form a ball and place onto a parchment paper-lined baking sheet. Remember to leave some space for the cookies to expand.
7. Bake for 12-15 minutes, or until the edges have started to barely brown.
8. Let the cookies cool down and voila, homemade Subway cookies.
