Bananas can turn overripe easily and if you don't want them to go to waste, here's a simple recipe to turn this:

The ingredients you need are:
-200 g of overripe bananas (around 2-3 bananas)
-120 g of self-raising flour, cake flour or all-purpose flour
-3/4-1 teaspoon of baking powder
-3 large eggs at room temperature
-100 g of powdered sugar
- 100g of unsalted butter, melted
Steps:
1. Preheat oven to 190° C.
2. Mash the overripe bananas in a bowl until fine.
3. Sift the flour and baking powder.
4. Add the eggs into the bowl of a stand mixer and mix until it becomes bubbly and foamy.
5. Add the sugar and beat on the highest speed for 3 minutes until it is foamy.
6. Add the mashed bananas into the egg mixture and gently mix with a spatula.
7. Divide the flour into 3 parts. Add half of the butter into the egg mixture, gently mix with a spatula. Add flour and butter alternately and mix gently in between. Make sure the flour is fully dissolved. DO NOT OVERMIX to retain the air bubbles in the beaten eggs.
8. Pour the batter into the pan. To avoid the top of the cake from becoming too burnt, cover the top of the pan with aluminum foil after 20-25 minutes into baking.
9. Bake the banana for 40-50 minutes, or until a cake tester comes out clean in the center.
10. Remove the cake from the oven, let it cool for 10 minutes before cutting into pieces.
Now you can make use of your overripe bananas to bake this delicious tea-time treat without having to throw them away.
