Hot weather and MCO got you craving for shaved ice desert? Don't worry we got you, here are some simple steps to make QQ taro and sweet potato balls like the ones you get in Taiwanese dessert shops.
The ingredients you need are:
- 1.5 cups/350g each of taro, sweet potato, and purple yam
- 3/4 cup/150g of tapioca starch (for each root vegetable)
- Hot water (depends on dough consistency)
- 1 tbsp of granulated sugar
Steps:
1. Cut taro, sweet potato, and purple yam into pieces and steam for 20 minutes or until it is soft to puncture.
2. Mash the steamed taro, sweet potato, and purple yam until it becomes a paste.
3. Mix the paste and tapioca flour together (3/4 cup or 150 tapioca starch for each root vegetable).
4. Add hot water while rolling the dough until the dough doesn't crumble when rolling.
5. Divide the dough into 4 pieces and roll each piece into a long dough.
6. Cut the long dough into half-inch pieces.
7. Coat the dough pieces with tapioca starch to prevent them from sticking together.
8. Cook the taro and potato balls in boiling water until it floats. Let them cook for extra 1-2 minutes and place them into a bowl of ice-cold water for that QQ consistency.
9. Remove the taro and potato balls from the cold water and mix them with granulated sugar.
10. Add onto shaved ice or hot desserts like red bean soup as an extra topping. Enjoy!
