- Line a 9 x 13 baking pan with parchment paper or foil.
- Melt & stir 1/2 cup of semi-sweet chocolate chips for 1 min. in a small bowl. Set aside.
- Melt & stir 300g of vanilla chips in a medium-sized bowl for 1 min. 30 sec..
- Add 1/2 cup of peanut butter into the melted vanilla & stir until well-combined.
- Pour the vanilla-peanut butter mixture onto prepared pan.
- Add the chocolate mixture on top in lines. Use a knife to make a swirl pattern as you like.
- Chill in the fridge & cut into equal pieces when ready.

3. Shortcut Lime Cheesecake

- Beat 2 cups of frozen whipped cream in a bowl until you see stiff peaks.
- Arrange 300g of chocolate graham crackers in 1 layer on a pan, overlapping each other.
- Layer with 1/3 of the beaten whipped cream.
- Layer again with 1/3 of 2 cups of cherry pie filling.
- Repeat layers two more times, with a total of 3 layers.
- Refrigerate for at least 6 hours or overnight. Garnish with extra whipped cream if you like.

- Roast 1/3 cup of peeled almonds for 15 mins until nicely browned. Chop finely.
- Melt 1 & two thirds cup of dark chocolate a bowl & stir gently until smooth.

- Pour mixture into a plastic wrap-lined pan. Sprinkle extra chopped nuts on top.

- With your clean, wet hands, form the batter into small balls on a tray. Press every ball into a cookie shape.

- Whisk 480ml of heavy cream & 130g of sugar in a saucepan. Add lemon zest & a pinch of salt.
- Bring to a simmer over medium-high heat, while whisking regularly.
- After 5 mins. when the mixture is a little thick, remove from heat.
- Add juice from 2 whole lemons & let it cool until a skin forms on top the mixture.
- Strain the mixture with a sieve.
- Pour into serving glasses. Refrigerate uncovered for 3 hours.

- Blend 1 cup of rolled oats into flour.
- Add 3/4 cup of pitted dates & blend for 30 secs more or until finely chopped.
