Oh, we all love looking at how Disney manages to make animated food look so delicious. It has the ability to make us crave an animated dish.
In one of their latest movies, Raya and the Last Dragon, a movie displaying rich South East Asian culture, we see a dish called the Kumandra soup being served.
Here’s how you can make it at home!
Ingredients:
+ around 250 grams of fresh head-on shrimp
+ 2 lemongrass stalks + more for garnish
+ 5-6 dried limau purut leaves, torn
+ 5-6 dried galangal slices
+ 100 grams oyster mushrooms, separated or sliced
+ 2 Tbsp fish sauce
+ Juice of 3 limes (or to your taste)
+ 1 ½ Tbsp (Nam Prik Pao) chili paste
+ 1½ Tbsp shrimp paste (belacan)
+ 4 red birds-eye chili, thinly sliced (cili padi)
+ 10-12 bamboo shoot slices (rebung)
+ 2 tsp palm sugar
+ some salt to taste
+ Coriander, for garnish (daun ketumnbar)
Instructions:
1. Peel and clean the shrimp while leaving the tails on and set aside. Keep the shrimp shells, we need them into next step.
2. Boil around 2/3 of the size of your pot full of water and add in the shrimp shells. Let it boil for around 15-20 minutes.
3. While that is boiling, cut the lemongrass into 3-inch portions and crush the stalks.
4. Remove the shrimp shells and add the lemongrass, lime leaves, and galangal. Boil the soup for another 7-10 minutes.
5. Add the shrimp and mushrooms. Leave it to simmer until the shrimp is cooked.
6. Turn the heat off and add the fish sauce, lime juice, and chili paste. Stir to combine.
7. Then add in the shrimp paste, Thai chilies, bamboo shoots, palm sugar, and more thinly sliced lemongrass.
8. Add enough salt then top the soup with some coriander.
That’s it! Your Kumandra Soup is now ready to be served, steaming hot into cute little bowls.
