With COVID-19, many of us couldn’t balik kamoung for raya and celebrate it with our mum’s delicious homemade rendang.
Well, since you are an adult now, it is time your start making your own rendang. Here’s a recipe to make every day feel like raya:
Ingredients
+ 3 onions
+ 6 cloves of garlic
+ 6 lemongrass stalks
+2 inches of ginger
+ 2 inches of galangal
+ 2 inches of turmeric
+ 3 spoons of blended dry chili
+ 3 spoons of kerisik
+ 1 small box of coconut milk
+ 3 pieces of asam keping
+ 5 limau purut leaves
+ 2 turmeric leaves
+ Sugar and Salt according to taste
+ 1 whole chicken, cut into small pieces
Instructions
1. Soak a good amount of dry chili in hot water before blending it into a smooth paste. Remove from blender and set aside.
2. Blend onions, garlic, lemongrass stalks, ginger, galangal, turmeric and some water into a smooth paste. Then, fry this paste with three tablespoons of the chili paste in some oil.
3. Once the oil separates from the paste, or as we Malaysians call it, pecah minyak, then add in your chicken and mix it in.
4. Add in your asam keping and limau purut leaves.
5. Once the chicken is partially cooked, add in the coconut milk and kerisik.
6. Then cover it and let it simmer until it dries up and becomes a thick paste.
7. Add some sugar and salt according to taste. Then, add in your turmeric leaves and mix it in.
8. Tadaa! Your rendang is ready! Serve with some rice and enjoy!
